The restaurateur behind an empire of East Village eateries is hoping to push further south below East Houston with Sauce Restaurant. Frank Prisinzano is currently gunning for the recently-vacated Kampuchea/Bun & Co. space at 78 Rivington Street, and will argue his case for both a wine and beer license and seasonal sidewalk cafe at CB3’s upcoming SLA meeting on Monday.
Much like the other restaurants in the “Frank” stable – Frank’s, Lil’ Frankie, Supper – Sauce will focus on Italian cuisine. Documents filed [PDF] with Community Board 3 indicate that there will be 29 tables and a stand-up bar for a maximum occupancy of 130 diners. Prisinzano will allegedly employ 82 workers, and keep the establishment open 7 days a week from 8 am to 9 am. It’s this latter chunk of intel that’s somewhat disconcerting.
Kampuchea survived four years at 78 Rivington before owner Ratha Chaupoly decided to switch up his concept from Cambodian to gourmet sandwicherie. Bun & Co. was ultimately the result of such plotting, but like its predecessor, succumbed to the same fate shortly after opening. Chico’s mural on the Allen Street facade remains intact, albeit with some errant tags.
