The culinary transition at 188 Allen Street is nearly complete. It’ll still be a one-trick pony, but no longer for dirty water dogs. As we first reported two months ago, the address is instead on track to become a “fast casual” grilled cheese outpost. Its name – Cheese Grille. So, yeah, fairly low on the clever scale.

The wooden exterior was buffed earlier this week. Yet gandering past the windows, the insides pretty much resemble the predecessor.

Also, this. A recent Craigslist job posting reveals that Cheese Grille is on the lookout for a full-time manager. Pay is $800 per week, plus revenue sharing bonuses.

Cheese Grille is the fourth concept here in the last six years. Remember them all?

With One Manhattan Square an eyesore of the Lower East Side skyline for so long, it’s almost impossible to remember what came before. Almost.
