Shakeup at Pearl & Ash: Kitchen Changes and Renovations

You may have seen those trendy garbage bag curtains hanging in the windows of Pearl & Ash the last couple days. The restaurant is not closing, but retooling after a recent shakeup in the kitchen. (The first cracks of uncertainty.)

Former executive chef Richard Kuo left the business and has already been replaced. Managing partners Patrick Cappiello, Branden McRill, and Alessandro Zampedri (who also owns the Bowery House hotel upstairs) chose Trae Brasore to take the reins. Brasore comes from Colicchio & Sons, where he was a Sous Chef.

Renovations were timed to coincide with the change in personnel. Apparently the dining room will be “lighter and brighter” with more plants and flowers upon reopening later this week.

Pearl & Ash opened on the Bowery in 2012, and continues its run as a critics’ darling. Nearly three years later, elements of the establishment opened Rebelle in the old R Bar space at 218 Bowery.
